Makes 120 ml
Many store-bought curry pastes can be high in preservatives and low in flavour. For delicious and healthy curries, you can easily make your own paste.
Ingredients
Dried red chilli (large), de-seeded 7-8 pieces
Garlic 6-7 cloves
Shallot 1 (medium)
Lemongrass 1 stalk
Dry coconut powder (or dessicated) 2 tbsp
Cardamom 2 tsp
Coconut oil 2 tbsp
Clove pods 2-3 pieces
Method
Roughly chop the chilli, garlic, shallot and lemongrass. Lightly smash the cardamom pods and cloves.
Mix the ingredients in a bar blender or food processor on a medium speed level for 1 minute.
