Healthy Cooking with Kamalaya: Detox Penang Curry Paste

Large dried chillies, 1/3 cup
Sea salt, Pinch
Galangal, cut into matchsticks, 2 Tsp
Lemongrass, sliced finely, 2 Tbsp
Coriander root, 1 Tbsp
Coriander seeds, 1 Tsp
Cumin seeds, 1 Tsp
Garlic, chopped, 2 Tbsp
Shallots, chopped, 2 Tbsp
Sunflower seeds, 1 Tbsp

Soak the chilies in water until they’re soft and then cut them open to remove the seeds.

Toast the cumin seeds and coriander seeds in a pan over medium heat until fragrant (about 3-5 minutes).

Use a mortar and pestle to grind the toasted seeds until powdered. Remove and set aside. Now grind the sunflower seeds add them to the coriander and cumin seed mix.

Next, grind the chillies with the salt until it forms a paste. Add the lemongrass and pound to a paste. Add the galangal and coriander root and pound to a paste.

Finally, add the reserved powdered seeds, garlic and shallots and grind to a paste.
